We have absolute control over the production of extra virgin olive oil. After the olives reach the mill the process is simple : the leaves are removed from the olives with a blower, the olives are washed and then crushed to form a paste. They are cold pressed. The aroma is amazing!

The oil is then separated from the paste. Fresh oil has a cloudy appearance due to fine suspended olive particles. It is filtered and stored in airtight stainless steel tanks so that the olive oil maintains its excellent chemical and organoleptic characteristics.

The core or "waste" is returned to the estate to improve the soil.
